Page Tangerine Granita

Granita is a frozen treat so simple, you really can make it.
Page tangerines make wonderful granita - tart-sweet and beautifully
bright orange.
Fancy it up by serving it with a bit of vanilla ice cream - or not!
• Juice enough Pages to cover the bottom of a metal baking pan to
about .75 inch
• Add simple syrup (or agave syrup) : about 5 -10% of the juice
volume. The liquid sweetener smooths the consistency of the frozen
juice (also a pro tip for making your own frozen juice pops).
• Pour into the baking pan and carefully slide into your freezer.
• Check it after 30 minutes. If it has set up enough, drag a fork
through the semifrozen juice to "scurf" it.
• Repeat the scurfing at 60 minutes and 90 minutes.
You can keep it in the freezer til you are ready to serve. Fluff it
with a fork before you plate it.
